Crab Puffers!!

Have you ever craved a melt in your mouth cheesy crabby delight?? Well, now is your perfect opportunity! Coming from the Chesapeake, I am accustomed a wonderful treasure called Old Bay. It is a necessary ingredient in my household and it the special secret to this little recipe. I'm talking about crab puffs! My mom had this recipe and whenever we have guests, crab puffs are always expected! I made them this week for a party on my hall, so I hope you don't mind if I share some of the other goodies we had as well!!! 


First, I'll share the recipe for the crab puffs! 


1 lb. imitation crab meat, approximately 
2 c. grated Swiss cheese
1 c. grated mozzarella cheese
1/4 c. fresh spring onion
1/4 c. mayonnaise 
2 T. lemon juice
Old Bay for topping 
2 pkg. Hungry Jack biscuits (the ones that are flaky) 


(Ok, confession time: I did not measure any of this stuff. These measurements are good for the first time making them, but once you get the hang of it, you can more or less of the ingredients and it will still taste fantastic!)

First, you need to pull apart the crab into little chunks, like shown below.


Then mix together in a bowl crab meat, Swiss and mozzarella cheeses, onion, mayonnaise, and lemon juice. It should like this.


Then open the biscuits and pull them apart. Because they are the flaky ones, they should easily separate into two or three layers. If you do not separate them, it will be too thick and overwhelming. Then place them on a lightly greased baking sheet and place about a heaping tablespoon (rounded in your palm) onto each biscuit section. Sprinkle lightly with Old Bay, and place in a preheated oven at 400 degrees for about 10 minutes. 
Here is what they look like unbaked!

Once they are done, put them on a platter and serve them to your guests hot. If you are taking these to an event, it is best to make the crab filling at home and then bake them at the event. This serves about 60 people.

Let it Snow?

YES! Let it snow! Finally! This past weekend, we had a massive storm and let me tell you, OMGOSH!! THANK THE LORD!! I was ecstatic! All day on Sunday and Monday, students were out sledding in our their makeshift sleds with trash bags and mattresses! It was grand! It was glorious! The first and probably the last snow I'll ever see this winter was definitely one to remember. So much so that I documented it!!

Too Long!

Wow! I can't believe it's been almost a month since I've last blogged! Ridiculous!!! Do you ever have those weeks of never ending deadlines, no sleep, and unexpected emergencies??? Yeah, well that's been my life for the past couple weeks. I even had the grandiose idea to buy chocolate covered express beans to help me stay awake. Horrible decision, by the way! It tasted like I was eating chocolate covered beef jerky!! So here's a little of what I've been up to the past couple days.......

 Of course, everything I'm wearing was thrifted or given as a gift. The only I paid for personally are the jeans, which are from American Eagle.

This is my adorable little quad-mate! Her name is Seeun and I had to share her unique style with you! She is such an inspiration and I'm so blessed to have met her! I believe everything she's wearing is from South Korea. Cool, huh!!
